A Conversation with Warren Burns and James Bradey

When it comes to creating spaces that combine hotel luxury with a grounded atmosphere, Liquid and Larder Founders Warren ‘Wazza’ Burns and James ‘Jimmy’ Bradey have mastered the art. We caught up with Wazza and Jimmy to hear about the inspiration behind Bar Julius at The EVE Hotel in Redfern, their lively new lobby bar. It promises European flavours and a welcoming vibe from morning to late night. 

 

How did the concept for Bar Julius come to life?

Jimmy: Bar Julius is inspired by that quintessential hotel lobby bar, the kind you find in the world’s most iconic hotels. There’s always this energy that keeps people coming back, whether they’re guests, travellers, or locals. You’ve got people who are finishing up a day of meetings, some winding down, others just stopping by for a drink. We wanted to create a space where everyone feels like they belong.

Wazza: The best hotel lobby bars make you feel like you can’t wait to get back. You go there once, and you’re already planning your return. That’s what we envisioned for Bar Julius: a place where you’re drawn to linger, relax, and enjoy without any pressure to leave.

What makes Bar Julius distinct?

Jimmy: The space itself is striking. The design team collaborated with local artist Louise Olsen Founder of Dinosaur Designs to create a custom ceiling art that elevates the bar’s atmosphere. The European bistro influence is seen throughout, from the design to the menu, showcasing familiar dishes with just the right level of flair. You’ll see something on the menu, know what it’s about, and be able to expect a high standard in taste and presentation.

Wazza: We’re not looking to reinvent the wheel but to make the classics memorable. It’s elevated comfort, with dishes that speak to you, steak and chips, a fantastic bagel, maybe even a standout hot dog crafted with quality and a twist you’ll remember.

 

Any signature dishes or experiences guests should look forward to?

Wazza: Our team is known for The Gidley’s 9th-ranked burger, so expect our hot dog to get the same attention to detail. It’s still in development, but we’re aiming for something unforgettable. We’ll also have a steak that will hold up to our reputation, plus a breakfast menu with the bagel as a hero item. It’s all about simplicity done exceptionally well.

Jimmy: We’re also bringing that classic European wine list into play with a cocktail menu that leans toward stiff and strong. And while we’re still finessing the details, you can expect some table-side moments that add a touch of showmanship without slowing down the service or overcomplicating the experience.

What vibe are you hoping guests will feel as they step into Bar Julius?

Jimmy: Imagine you’ve just arrived after a long flight or you’ve had a rough day. The minute you walk into Bar Julius, we want you to feel looked after. You can drop your bags, get comfortable, and unwind on your terms. No rush, no pressure, no bookings. Whether you’re in for a quick coffee or a long evening with friends, it’s a space that moves at your pace.

Wazza: It’s all about creating an atmosphere that’s lively yet unhurried. We want people to come here and feel like it’s a ‘want-for-nothing’ kind of place. There’s no urgency. Sit back, enjoy a drink, maybe a snack, or stay as long as you like.

 

Bar Julius represents a place for everyone. It’s vibrant, laid-back, and a little indulgent, blending that hotel-lobby charm with an approachable menu. It’s the kind of space you want to visit again and again, where every experience feels effortless yet memorable.
